In the lead-up to MAD7, Frederik Bille Brahe, chef and creative mind behind Atelier September, Apollo Bar and author of Atelier September: A Place for Daytime Cooking, joins Franco Fubini, founder of Natoora and author of In Search Of The Perfect Peach for an intimate conversation on what it takes to reclaim flavour, ceremony, and meaning in a world that so often rewards the opposite. Led by Fool magazine's iconic creative duo, PA and Lotta Jörgensen, the discussion will delve into the ways in which our food culture is built on acceleration and the illusion of abundance, highlighting how choosing to make a meal slowly, precisely, and with care becomes a quietly radical act. As we rush towards speed and simplification in every part of life (including how we eat) perhaps the most subversive thing we can do is slow down and find reverence in flavour.
